Homemade Cocoa, Coconut and Peanut Butter Nakd Bars

Dear Reader,

I found this lovely recipe which I have linked below but I have made some minor tweaks as I found it very dry. The original recipe contains mint and no peanut butter, so you are welcome to do a little chop and change between the two recipes!

  • ½ cup dried dates
  • ½ cup almond meal (or almonds)
  • 3 Tbsp sultanas
  • 2 Tbsp cocoa powder
  • 1-2 tsp boiling water
  • Peanut butter (small amount)
  • 2 tsp desiccated coconut unsweetened

Method

  1. Combine dry ingredients into a food processor and pulse until a fine consistency and no lumps of dried fruit remain
  2. Add ½ a tsp of boiling water at a time and blitz together
  3. Shape into balls/bars as desired and with each serving add a small amount of peanut butter that acts as a binding agent
  4. Wrap in cling film
  5. Store in an airtight container in the fridge
